Ste. Chateau Michelle Rose 2020 - 100% Syrah

This wine is very light in aroma, it smells very floral, like a garden. The color is nearly clear, looking at it from the side it almost looks completely clear. Looking at it from the top you can see the pink hue more. This wine is very simple in taste. I'm primarily getting fruity notes, specifically a lot of strawberry. There is sort of a generic sweet berry taste. We paired this wine with a Havarti cheese. In my opinion, this cheese didn't pair very well with this wine for a few reasons. The Havarti really brought out the bitterness of the wine I feel like, which was surprising considering the Havarti is a pretty weak cheese (not much flavor). I thought the creamy-ness of the cheese would bring out some of the sweetness in the rose, but instead it just brought out a lot of the alcohol and bitterness. However, when eating a small amount of the cheese it is is a bit more pleasant. I think when having a small bite of the cheese it actually brings out the floral notes of the wine.

Liberty Creek Cabernet Sauvignon 

I actually quite liked this wine. Off the nose it smells very full bodied and heavy, lots of black cherry. The  wine is a bit sweet, and mildly dry. From the smell I thought it would be a bit fuller bodied in the mouth, but it was actually fairly mild. The primary flavor I get is plum. Towards the end of the drink I get some sort of spice in my throat but I'm not entirely sure what it is. On the tail end of the plum I get notes of strawberry, this is a fairly fruity wine. We paired this wine with aged cheddar. To be honest, I don't think pairing this with the aged cheddar really changed much. I think they go well together, the creamy-ness of the cheese is really brought out by this combination, but in terms of transformation of flavors I don't get much. So far I feel like the wine effects the cheese more-so than vis versa. 

The Corker Cabernet Sauvignon - 100% Shiraz

I really don't like this wine. To be honest I disliked it so much that I don't really think I can give great tasting notes. This thing is repulsive. When I smell it I get a lot of prune smell, and unfortunately old people? On the tongue it reminds me of my great aunts really bad Christmas fruit cake. It has very very heavy raisin notes, which is so over powering I can't taste much else. Right after the raisin there's a lot of cinnamon. This is definitely one of the more powerful wines I've tasted. We paired this atrocity with blue cheese, regretfully another item I don't really like. Combined, these two are terrible. It becomes an amalgam of really bad raisin and moldy cheese flavor.
